Chef Patron, Alan Hill is almost as dedicated to serving traditional real ales as he is to serving fantastic food, championing local breweries such as Thornbridge Brewery in Bakewell, and Peak Ales which is located on the Chatsworth Estate:

The Thornbridge Brewery is an independent brewery sited in the grounds of Thornbridge Hall near the village of Great Longstone, Derbyshire. The aim of the brewery is to make a small range of quality cask and bottled beers using new recipes, innovative approaches and the use of local fresh ingredients.
The first beers appeared in February 2005 and more than 30 awards have been won by Thornbridge's brews since its opening, including the Silver Medal (Strong Ales) at the Great British Beer Festival (August 2006) for Jaipur IPA.
In January 2009, Thornbridge Brewery was featured in the first episode of the TV series Oz and James Drink to Britain with Oz Clarke and James May.
The Devonshire Arms at Pilsley serves Jaipur India Pale Ale - A citrus dominated India Pale Ale, its immediate impression is soft and smooth yet builds to a crescendo of massive hoppiness accentuated by honey. An enduring, bitter finish.

Rob and Debra Evans launched Peak Ales in 2005 and Stuart Wragg joined the business in October 2006. Peak Ales have matured in every sense over the years and this is now a thriving microbrewery supplying both cask and bottled ales to local pubs, hotels and retail outlets. Peak Ales were voted ‘Beer of the Year’ in 2006 by The Derby Evening Telegraph and they grow more popular by the day.
The Devonshire Arms at Pilsley serves Chatsworth Gold, a golden beer made with honey from the Chatsworth Estate. The delicate sweetness from the honey is well balanced with bitterness from Goldings and Fuggles hops.
